Valentine’s Day is right around the corner and we’ve got the perfect dessert for you and your bae. Forget the boxed brownie mix, these Gluten-Free, Dairy-Free fudgey AF brownies by Maddie Pasquariello from @eastcoasthealth are insanely delicious and way better for you. AND, they couldn’t be easier to whip up, leaving you plenty of time for other activities! 😉
MINT CHOCOLATE BROWNIES
Time: 30 minutes
½ cup coconut oil or dairy-free butter alternative
1 cup dairy-free dark chocolate chunks or chocolate chips, divided
¼ cup almond butter
2 large eggs
⅓ cup coconut sugar
½ cup Mint Chocolate Après
2 drops peppermint extract
1 tsp vanilla extract
½ tsp cinnamon
¼ tsp baking soda
¾ cup gluten-free all-purpose flour
Preheat oven to 350 F. Grease a 8x8” or 9x9” clear baking dish with coconut oil or butter.
In a small heatproof bowl, melt coconut oil with half of the dark chocolate in 10 second intervals until fully combined. Set aside to slightly cool, then pour into a medium sized bowl.
Add in almond butter, eggs and coconut sugar. Whisk well. Add Mint Chocolate Après, peppermint extract, vanilla extract and stir. Switch to a mixing spoon, add your cinnamon, baking soda, and flour and stir well to fully combine.
Stir in your remaining chocolate chips, then place into the center of your preheated oven and bake for 18-22 minutes. The center will look glossy and the sides will look fully set. It should give just a bit when poked, and will continue to fully cook through in the pan. This ensures fudgy brownies with chewy edges. Serve with coconut yogurt and fresh berries.
