Mmm. We love a warm pancake drizzled with almond butter and honey. Even better, these pancakes are low in sugar and packed with protein and fiber. Whip these up this weekend for the best brunch ever.
1 cup Vanilla Après
1/2 tsp. cinnamon
1 cup oat flour
1 tsp. baking powder
1 tbsp. coconut oil
2 tbsp. almond butter (for topping)
Heat coconut oil over medium heat in a cast iron skillet. While that is warming, mash the bananas with a fork in a large bowl. Once mashed, add the bananas, Vanilla Après, cinnamon, oat flour, and baking powder - mix well. Spoon the mix into the cast iron making pancakes. Let cook for about 4 minutes on each side. Serve with almond butter drizzled on top.
